Scrumptious Egg & Veggies on Toast

Prep: 5 min ∙ Cook: 5 min ∙ Makes 1 serve ∙ Difficulty: Easy 

 

 

INGREDIENTS

1 slice Burgen Soy-Lin* bread, toasted

1 large egg

1/2 cup mushrooms, sliced

1 cup baby spinach

1/4 tsp crushed garlic

pepper

olive oil spray

 

DIRECTIONS

1. Lightly spray a small non-stick frypan. Cook mushrooms with crushed garlic. Add spinach and cook until wilted.

2. Poach or fry egg to your liking.

3. Top toast with mushroom mixture and cooked egg. Season with pepper and serve.

 

NOTES
