1 slice Burgen Soy-Lin* bread, toasted
1 large egg
1/2 cup mushrooms, sliced
1 cup baby spinach
1/4 tsp crushed garlic
olive oil spray
1. Lightly spray a small non-stick frypan. Cook mushrooms with crushed garlic. Add spinach and cook until wilted.
2. Poach or fry egg to your liking.
3. Top toast with mushroom mixture and cooked egg. Season with pepper and serve.
